Know the state of Yucatán
Its most popular recipe is Cochinita Pibil. Pibil, that in Maya language means “underground” and refers to the Mayans who cook this dish in a hole in the ground on hot stones.
Our Cochinita Pibil is pork marinated in artichiote and beans. We accompany it with our habanera sauce, made with red onion, vinegar and habanero chile.
Know the Puebla`s state
Its most popular recipe is the Tinga or shredded meat. We made Tinga de Veal and Tinga de Pollo. Veal or chicken in each case, with onion, tomato, garlic, and chipotle chili. Accompanied with our molcajeteada sauce with tomato, onion, cilantro and jalapeno peppers.
Know Sinaloa´s state
One of the most popular recipes in Sinaloa is theChilorio. Our recipe is based on lean pork meat, seasoned with chile pasilla, broad chile, cumin, oregano, black pepper, butter, potato and salt. Accompanied with our molcajeteada sauce of tomato, onion, cilantro and jalapeno peppers.

The origin of Chili con carne is much debated. Its history is related to the political history of Mexico and its relations with its neighbor of the north. The number of variations and recipes is uncountable.
In our interpretation, Chili is made with beef, tomatoes, red beans, red chili, onion, garlic, black pepper, oregano and cumin.
